Cold Enough

Once the nursery season is officially over, we wait for the temperatures to be consistently cold in order to cover plants in the retail and stock area. This is somewhat tricky on account of the fluctuating weather we may experience in the fall here in Maine. Many of the plants we over-winter are lined up and then covered in a specially designed winter ‘blanket’. Our ideal is to have the plants freeze and remain frozen, it’s the freeze-thaw-freeze-thaw that we’re most concerned about.

Our mission is to protect the roots of the plants. Because some of the plants will remain in their pots and not in the ground, the roots are vulnerable and susceptible to damage if left without protection. Therefore, more care and consideration is needed. Our annual ‘covering of the pots’ truly marks the end of our growing season, the last big chore in the nursery. Of course, we also have a tremendous amount of plants that are over-wintered in growing beds, these don’t require any extra defense and will rely on the earth (and hopefully good snow cover) to protect them. A patch-work of fall-related chores here at Fernwood as we welcome the winter season…we’ve processed this year’s supply of meat birds, the root vegetables are snug in the root cellar, and the firewood is (almost) all stacked in the woodshed. Hip Hip Hooray!
Oh, and bread making! Regardless of the season, there is breadmaking!

Identifying Ferns

Athyrium ‘Victoriae’

Athyriums, Dryopteris, Adiantum, and Matteuccia. Lady Ferns, Male Ferns, Ostrich Ferns, Painted Ferns, Maidenhair, Oak Fern and Narrow Beech Fern, Sensitive Fern. Some of the latin names for ferns, along with a (small…the fern kingdom is large!) sampling of common names.

Here at the nursery, we have a large selection of ferns that we sell. When developing or adding to an existing shade garden, ferns are often included in the design. Ferns grow in a wide variety of conditions, from dry to wet and in deep shade to sun.
Identification of some groups of ferns can be confusing. For example, in the genus Dryopteris, the differences between species can be difficult to sort out. For some people, all ferns can look very similar to one another and can be difficult to tell apart. We’re hoping to make that a bit easier through the information shared in the class. If you are looking for specific ferns to add to your garden landscape or simply wanting to identify the ferns you see in their natural settings, this class is for you!

Pickled Fiddleheads

Our daughter, Zoe, is getting married in September. We’ve been working hard on the preparations and details (aside from all the preparations and details here at the nursery, oh my!). Every day, crossing off one more ‘thing to buy’ or ‘person to call’…there’s lighting, and food, and dance music. Luckily, we have a generous bunch of friends, community, and of course, a family, who are willing to help out. A true blessing, for sure. Today’s project? Pickling fiddleheads for the charcuterie board. Of course, there must be pickled fiddleheads to offer guests if you’re from Maine, right? For this bride, there will be fiddleheads…and lobster rolls, and something made with blueberries. I’ll include a pickled fiddlehead recipe if you’d like to have a go at making some yourself or if, by chance, you have a soon to be bride requesting them at her wedding!

In a Pickle: Pickled Fiddlehead Ferns

YIELD:
makes 1 pint
ACTIVE TIME:

Ingredients
1/2 pound fiddlehead ferns
Kosher salt
1/2 cup apple cider vinegar
1/2 teaspoon mustard seeds
1/2 teaspoon dill seeds
1/4 teaspoon black peppercorns
2 allspice berries
1 garlic clove, smashed
Directions
1.
Place fiddlehead ferns in a large bowl of cold water and wash well. Rub away any brown chaff and trim cut ends.

Add two tablespoons of salt to two quarts of water in a medium saucepan and bring to a boil over high heat. Add fiddlehead ferns and cook for 10 minutes. Drain and rinse with cold water.

Combine vinegar, 1/2 cup water, and 1 teaspoon salt in a small saucepan and bring to a boil. Place spices and garlic cloves into the bottom of a prepared pint jar. Pack fiddlehead ferns into the jar and add hot pickling liquid to cover.

4.
Wipe rim, apply lid and ring and process in a small boiling water bath canner for 10 minutes. Remove jar from canner and let cool on a folded kitchen towel. When jar is cool enough to handle, remove ring and check seal.

5.
Sealed jars can be stored in the pantry for up to one year. Unsealed jars should be refrigerated and used promptly. Let these pickles age for at least a week before eating.

Our very dear WWOOF volunteer (Zoe) has gone to her next farm assignment over in the Maine western foothills and Dottie, our little bottle lamb, will be leaving this week to graze on grassy pastures over at our friend Sally’s. We’ll miss Zoe’s enthusiasm and positive energy (and her very good sense of humor!). We’ll also miss the pitter patter of our pampered lamb making herself comfortable inside the house. But she’s bigger now and ready to rejoin a flock of fleecy friends. Picture 2953
There are also some comings and goings in the gardens. Those wonderful azaleas are coming into bloom. Gorgeous… and some with a light sweet fragrance. One of our favorite plants, Saruma henryi, an upright and shade loving wild ginger, is also in bloom and quite lovely. Its soft yellow 3 petaled flowers and slightly fuzzy leaves are a beautiful addition to the woodland garden.

Picture 2897The month of June brings a new look to the gardens. Fuller now with the larger plants…hosta, rodgersia, ferns, polygonatums, and woodland peonies (to name a few) making an impressive statement.This being said, gems like Saruma henryi, anemonellas, and dodecatheons ( again, to name a few) are no less striking and appreciated. We, as usual, remain busy in the nursery continuing to pot up new additions and also to replenish the plants that have gone home with our customers. These comings and goings at Fernwood Nursery include people, plants, and….lambs.
